Burrata is getting a little more space on the menu at The Woodlands Eatery. The Oranjezicht restaurant has introduced two summer dishes built around the cheese: squid-ink and prawn risotto, and nduja pasta with cherry tomatoes.
The additions bring seafood and a little spice to the restaurant’s Italian cooking. The risotto pairs squid ink and prawns with fresh burrata, while the pasta uses nduja, the spicy, spreadable pork sausage. Both are part of a seasonal menu update that also brings back some older favourites.
Those returning dishes include seared tuna with peas and pistachios, fritto misto and salmon-and-whiskey pasta. The restaurant’s published menu gives the latter a little more detail: house-made tagliatelle with smoked salmon in a creamy whiskey sauce.
Woodlands’ Italian connection runs through the kitchen. Owner Matteo Santini grew up in a farming community outside Bologna and learnt to cook with his grandmother. The restaurant makes pasta in-house and bakes its hand-thrown pizzas in a wood-fired oven, with slow-cooked lamb ragu appearing across pasta, pizza and risotto.
The new burrata dishes join that wider menu at the red townhouse on Breda Street. The restaurant describes the additions as seasonal, so the summer update gives regulars something new to order alongside the dishes that have become part of its everyday cooking.
